A hummus production line is an integrated sequence of machines that takes raw chickpeas through to packaged product. A complete line typically covers chickpea soaking and cooking, grinding, high-shear processing in an industrial cutter mixer, homogenizing for an ultra-smooth texture, in-line cooling and automated filling. Each stage is matched to the next so material flows continuously instead of in isolated batches.
At the heart of the line is the cutter mixer, where blade geometry, bowl design and a vacuum or jacketed system emulsify chickpeas, tahini, oil and seasoning into a stable, homogeneous paste. Downstream homogenizing and cooling lock in the texture and protect shelf life, while clean-in-place (CIP) circuits keep the line compliant with food-safety standards such as HACCP and ISO 22000.
Production lines are sized by output. Mid-size lines handle a few hundred kilograms per hour for regional brands and co-packers; high-capacity industrial lines scale to several tons per hour for national producers and exporters. Because the same platform also processes tahini, baba ganoush, toum, dips and vegetable purées, one line can run a full spread portfolio and maximise asset utilisation.
